Kiddie Cooking – Granola

Granola and trail mix are my on the go, need a fix snack. Since this summer, I have been on a granola making mission.  So with kids on board and needing a family activity, we grabbed our new taste of home kid APPROVED cookbook and worked our mojo.  To me, recipes are mere starting points, suggestions.  With the oldest two wielding a wooden spoon and measuring cups, we got to work.  Here is our version of “big-batch granola”.

4 cups quick oats

1/3 cup honey

1/4 cup canola

1 teaspoon vanilla

1/3 cup dry almonds

1/3 cup pecan halves

1/3 cup raisins

1/3 cup dried berry mix (cherry, blueberries, and cranberries)

1/3 cup dates

Mix all ingredients together, spread on cookie sheet, and bake at 350 degrees for 25 minutes (stir every 5 minutes).  Once cool, store in a Ziploc bag or container.  For variations, add coconut, oat bran cereal, sunflower seeds – the options are endless.  We plan to add chocolate chips to 1/2 the batch for road trips.
