While the title did not excite my oldest, he thought blended pizza, the ingredients were on hand and the prep to table time tickled my time-saving bone.
Going to our play book, , I rolled out grilled cheese sammies and pizza soup in 25 minutes. This easily would have been 15-20 minutes, but the littlest insisted on helping. Setting the table was enough of a distraction so I didn’t over toast the sammies or burn the soup.
Quick pizza soup
1 pound ground turkey
2 cans tomato soup
3 cans of water
1 jar spaghetti sauce
1 tablespoon Italian seasoning
1 tablespoon minced garlic
1 teaspoon onion powder
1 cup shredded mozzarella cheese
1/4 cup pepperoni slices
Cook the ground turkey until done. Add in the garlic, onion powder, Italian seasoning, water, tomato soup, and spaghetti sauce; bring to a boil and then simmer for 10 minutes. While simmering, lay the pepperoni slices on paper towel, cover with additional towel and microwave until crispy, about 45 seconds.
Ladle up, garnish with a sprinkle of cheese, a dash of pepperoni, and enjoy!
My oldest said, “This is not what I was expecting. It’s actually tasty!” and the youngest polished off 2 bowls. Not bad for a something that may sound less appetizing.
As with all great recipes, it’s a starting point, a culinary spring-board. Each family has its own go tos or must nots when it comes dinner time. Be creative!
