Basic Pasta Salad

My go to last-minute summer dish is a basic pasta salad.  No frills, easy to keep ingredients on hand, and quick to prepare.  I can jazz it up depending on ingredients available.

Basic Recipe:

8 oz cooked pasta (kids prefer butterflies, aka bowtie)  When I have freezer pasta, this recipe is über fast to whip up!

1/4 – 1/2 cup italian dressing (Depending on how wet/dry, I want the pasta to be.)

1 large pepper diced

1/2 cup halved cherry or pear tomatoes

1 cup steamed broccoli

1/4 grated parmesan cheese

cracked black pepper and sea salt to taste

Mix the italian cheese and parmesan cheese.While the pasta is warm, toss it with the parmesan cheese mixture.  Next mix in cracked black pepper and sea salt to taste.    Side note:  I prefer a little more cracked pepper to give the pasta a little bite.  Finally toss in the veggies and voila, quick pasta salad!

With this as a starting point, feel free to add in other items on hand.  Other items that we have enjoyed:  feta, smoked sausage, carrots, summer sausage, prosciutto, pancetta – the list is endless.
