Pumpkin Dinner Rolls


A perfect accompaniment to any Fall theme meal, Pumpkin Dinner Rolls.  A hint of pumpkin, a lot of fluffy goodness, just what any Thanksgiving dinner needs.

Being home with a sick kiddo meant shortening up the last raise cycle.  So they may not look pretty, but it is all about the taste.

I discovered this recipe years ago, copied it down, and have only recently taken the time to make these little delights.

Pumpkin Dinner Rolls

1 cup milk

2/3 cup sugar

1 cup canned, pureed pumpkin

1 egg

1 stick butter, softened

1 Tablespoon instant yeast

2 teaspoons salt

5 1/2 cups flour

6 Tablespoons melted butter

Preheat oven to 350. In a mixer with dough attachment, combine the milk, sugar, pumpkin, egg, softened butter, yeast, salt and flour.  Mix on low-speed until combined, then increase and mix 5 minutes to knead dough.  The dough needs to be soft and pull away from the sides (beginning to ball).  If the dough is sticky, add additional flour, 1/4 cup at a time.  Cover bowl with plastic wrap let rise until doubled.  Coat cake pans with non-stick spray.  Add 12 balls to each pan, cover with plastic wrap.  Allow for another rise, about 45 minutes.  Brush tops with melted butter.  Bake 20-25 minutes or until light brown.  Brush with butter again.
